First off, HAPPY THANKSGIVING!
Earlier this week my family and I had an early Thanksgiving “Fam-Jam”. We had leftover ham from it, so I made a Ham and Potato soup. An instant pot is basically a pressure cooker… just not as intimidating to use, plus this soup will only take 10 minutes to cook!

Here’s how I made it:
First, I put together my mise en place (celery, carrot, onion, garlic, potato,and Ham)
Next, I added my mise en place to the instant pot, on the saute setting, along with butter and cooked my mirepoix plus garlic.
Then I added the potatoes, ham, vegetable stock and heavy cream to the pot. Mixed it till everything was combined and put the lib back on and cooked it on manual for 10 minutes.
I got my family to try it.
My dad didn’t think he would be too into it but he ended up liking it a lot. (I added some cayenne pepper to it just to have a spice factor) My dad is usually all for spice and what-not and with the little bit I added to the soup he really enjoyed it! He said that the soup is a hearty, winter/fall type of soup because of the potatoes and ham.
I think the soup is a good dish to make if you have leftover ham from Thanksgiving or Christmas, and with the instant pot its 10x faster than cooking it on the stove!
